Superfood Thai Black Rice Pudding

The new rice pudding is black, vegan, and a whole lot healthier for you.  This recipe is only slightly sweet and uses black rice, which has been touted as a superfood.

Ingredients

  • 1 c thai glutinous black rice soaked in water overnight
  • 1 can coconut milk 14 oz
  • 2 c water
  • 1/4 c brown sugar or sweetener of choice
  • 1/2 tsp sea salt

Garnish

  • coconut cream
  • fruit of choice: mango, peaches, nectarines, blueberries, etc.

Instructions

  • Put all ingredients in a pot and bring to a boil. 
  • Once it starts to boil, it will begin to thicken.  Keep stirring every 2-3 minutes until the rice is al dente.  This should take about 30 minutes.  The consistency would be like oatmeal.  If it gets too thick, you can add a bit of water to loosen. 
  • Serve hot with fresh fruit and coconut cream.  

Notes

  1. After soaking the rice overnight, be sure to drain and rinse the rice.  That will help wash off any harmful arsenic. 
  2. Keep stirring the pot, so it doesn't settle and burn. 
  3. If you don't soak the rice overnight, you'll just need to add more water and cook the rice longer.  Though it could take twice as long.
  4. If you don't care for the stovetop method, you can also cook in the rice cooker.  Cook as you would regular rice or on the porridge setting.  It may just be softer and less al dente than the stovetop method. 
  5. Can be served hot or poured into containers, put in the fridge, and served cold the next day.
