Roasted Delicata Squash
The easiest pumpkin to cut is appropriately named Delicata Squash, as if it is delicate. Try roasting this one pumpkin wonder to get that warm, cozy winter feeling in your home.

1 lb delicata squash deseeded and sliced 1/2" thick 1 Tb extra virgin olive oil 1/4 tsp pink Himalayan salt or 1/2 tsp kosher salt
Preheat oven to 375 degrees F.
Toss all ingredients together, and spread on a baking sheet.
Bake for 25-30 minutes until the squash is completely soft and pierceable with a fork.
You can peel the skin or not, depending on your preference.
Add 1/2 tsp of spices if you like such as curry powder, turmeric, ginger, rosemary, or thyme prior to baking.
Roast until completely soft and tender for maximum flavor and sweetness.
